Sole, a new Italian Restaurant has opened at Conrad Abu Dhabi

Lovers of Italian Cuisine are in for a treat at Sole at the Conrad Abu Dhabi.

Exciting times in Abu Dhabi as a new Italian restaurant, Sole, has opened at the Conrad Abu Dhabi Etihad Towers adding to the impressive array of dining options at the hotel.

Taking over the location previously occupied by BiCE, Sole is all set to wow Abu Dhabi with its contemporary take on Italian cuisine using the finest ingredients.

Signature dishes include ‘We’ve Twisted A Classic’, which is double dough ravioli, spinach, homemade ricotta, butter-poached red mazzara prawn and artichoke crisps.

‘The Poor Marriage’, which includes pasta potato, veal pancetta, smoked provola, 24-month old reggiano cheese and black truffle, and ‘What A Catch’, a combination of poached sea bass, herbs, roasted garlic, fresh tomato broth and charred lemon.

To complete the dining experience on a sweet note, diners can opt for Sole’s signature dessert, Trust Me, I’m from Napoli. The astonishing dessert is made from “the real deal baba”, silky Italian cream, berries, and bling.

Head Chef, Simone De Vivo says,“It has been a great personal achievement to have joined this incredible team and become a part of the Conrad Hotels & Resorts family. I am extremely excited to head up Sole, and share my love for innovative, fun, and flavorsome food. I began my culinary journey in my hometown of Naples, Italy and I cannot wait to share everything I have learnt and mastered along the way.”

Diners can choose from either indoor or ‘al fresco’ seating options and enjoy the restaurant’s relaxed and joyous atmosphere
