Conrad Abu Dhabi Etihad Towers is delighted to announce the appointment of its new Chef de Cuisine, Nicola Diella at Sole, bringing with him over two decades of international culinary expertise and a lifelong devotion to authentic Italian cooking.
Raised in a family where every gathering centred around the kitchen, his passion for food began early, at just 14 years old, learning the craft of pizza-making as an apprentice. Since then, his culinary journey has taken him across Europe, South America, and the Middle East, shaping a career defined by versatility, technique, and a deep respect for Italian tradition.


From cruise ships to fine-dining restaurants, each step in his journey contributed to the distinct culinary identity he brings to Sole today. Most recently, he led acclaimed Italian dining experiences at Emirates Palace Mandarin Oriental and Park Hyatt Saadiyat, where he played a key role in expanding Abu Dhabi’s Italian dining scene.
Now joining Sole as Chef de Cuisine, Nicola brings the same dedication, creativity, and refined skillset to the restaurant’s newly launched menu.
