Cyan Brasserie, the vibrant signature restaurant at Andaz Capital Gate Abu Dhabi, unveils its fresh new take on French-Arabic dishes, created by new Head Chef Royston Savio Vaz

Andaz Capital Gate Abu Dhabi, the iconic and statuesque hotel located in the heart of the UAE capital, kick-starts its new season with two very exciting announcements.

Infusing a fresh new take on flavours and dining experiences, the landmark hotel has appointed a new Head Chef, and unveiled a brand new modern French and Arabic menu for Cyan Brasserie, its luxurious signature restaurant situated on the 18th floor.


Known for its 270 Degree views over the city skyline and spectacular decor, the new Cyan Brasserie menu takes guests on a journey through the authentic ingredients and spices of the Arab world, married with classic techniques and a rich French culinary culture.  

Bringing more than 16 years of experience in the UAE and India, Head Chef Royston Savio Vaz is well-versed with global cuisine.  Using insights from his culinary experiences, Chef Royston, has curated an inspired menu with French and Arabic influences.  

Showcasing the best of French and Arabic cuisine, guests are invited to savour dishes such as Compressed melon with goat buttermilk, pinenuts, frisée, pickle radishes; Mushroom Tart with Gruyere crème, shaved black truffle; and Jordanian Mansaf featuring Lamb Shank, jammed turmeric rice, and fried almonds.

Andaz Atypical signifies flavours across the globe with dishes such as Seared Scallops featuring curried coconut sauce, pomegranate, Bok choy Desserts; Vegan Coconut Panna Cotta which includes almond crumble, mango-passion salsa and Chocolate Pot du Crème featuring coffee maple honeycomb, candied ginger, Applewood smoke.

Further enhanced with a vast array of premium beverages and expertly crafted cocktails, the new Cyan Brasserie dining experience is a fine example of flawless culinary expertise and pure imagination.  

Raised in Kuwait and Goa, before honing his skills in the kitchens of world-renowned hospitality groups, Chef Royston’s food philosophy is based on wholesome, appetizing and nourishing dishes that warm the heart and feed the soul.

Driven by a desire to utilize food as a way of connecting cultures and people and paying tribute to the natural produce and history of different regions. A firm believer in improving proficiency and leading by example, Chef Royston can often be found on the restaurant floor chatting to guests and gaining valuable feedback and is renowned for his coaching and training skills.

Throughout my culinary journey, I’ve had the privilege of traversing various countries, immersing myself in their local flavours and culinary traditions. This unique experience has allowed me to infuse international influences into my creations, resulting in a rich and diverse culinary repertoire.”
