Fernando Galbiati
A seasoned chef, Fernando has worked hard as opportunities have presented himself to be the head of the kitchen in renowned brands such as Fairmont in the Cavalli Club, Hilton Jumeirah in the Bice Restaurant, Waldorf Astoria, Orion Hotel and the Bulgari resort & residence. Before his middle eastern experience, he debuted his career in Europe, specifically in Italy and London with his first opportunity being at Splendido hotel Portofino.
He joins us after his latest experience as the head chef of Bulgari resort & residence in Dubai.
Having worked primarily in the Middle East for the last 10 years for European brands and restaurants, he hopes to bring to Dusit Thani the classic tastes of Italian & Mediterranean cuisine. His training was under the directive of very hard-working passionate chef’s, and he was part of a generation of chef’s that could blend old classic techniques with new technologies and open doors to creativity. He is passionate and driven, and is ready to meet and train the new generation of chef’s, develop their passion and help them grown into leaders.
Fernando is ready for the new opportunities and experience he will have with a very wide variety of cuisines and chef’s as the Dusit Thani with signature outlets from Ireland, Thailand and India. He has always had curiosity towards other cuisines and believes that he will be able to develop new and interesting concepts at the hotel that highlight his team and blend the traditional Italian cuisine. His favourite dish to make is gnocchi, and he can’t wait to introduce it in Abu Dhabi.
Nivanta Nissanka
A seasoned chef, Nivanta joins Dusit Thani with over 13 years pastry culinary experience. He has worked under and with multinational chef’s with fine dining background around the UAE in the Crowne Plaza & the Cove Rotana. He debuted his career in Sri Lanka, his home country, at the Holiday Inn, followed by the Marriott in Riyadh.
He joins us after his latest experience as the pastry chef of the Cove Rotana in Ras al Khaimah.
Having worked primarily in the UAE in international hospitality brands catering a wide variety of restaurants, he has developed his pastry skills and perfected his French pastries working under a French chef for a better part of 3 years. He has always done everything with one goal, heading a pastry kitchen. He brings passion and experience to the Dusit Thani and has trained for wedding cakes and is ready to start making his mark for someone’s special day. Nanir has always loved experimenting with flavors and now has his signature receipees that he is excited to introduce into the Dusit Thani Abu Dhabi. He is ready to work with a team of international chef’s so that he may learn to make their favorite pastries as well as impress with his wonderful selection and talent.
