W Abu Dhabi – Yas Island is preparing for the arrival of Ahmet Dede, the talented owner and head chef of Dede at The Customs House – a Michelin-starred Turkish restaurant based in Baltimore, West Cork, Ireland, as he has an exclusive collaboration at the hotel and Yas Island from April 12th to 16th. These days will see Chef Ahmet cooking up a range of his famed Turkish cuisine, as well as Chef Okky and his culinary team at Garage preparing the well renowned Iftar spread: offering a wide range of delicasies across the five hubs.
Chef Ahmet Dede, born and raised in Ankara, Turkey, was inspired by his mother’s food, which was the real catalyst for his love of cooking and Turkish cuisine. Moving to Ireland to study Culinary Arts at the age of 25, he cut his teeth in some of Ireland’s best restaurants. Dede started his career in Baltimore, West Cork where he worked at The Mew’s Orginally in 2017. From there the journey skyrocketed and Ahmet had the opportunity to learn from remarkble and talented chefs where some even had Michelin Stars. In 2020, Ahmet dream came true and opened his own venture, Dede at The Customs House. Through his use of hyper-seasonal local produce, Chef Ahmet was awarded his first Michelin star in 2021 and was named the Best Chef in Ireland 2022 by both the Restaurant Association of Ireland and the Food & Wine Magazine Ireland, each a true recognition of his immense talent.
In his cooking, Chef Ahmet explores local delicacies while also paying homage to his heritage by expertly fusing locally sourced ingredients with an array of spices from his homeland. Boasting a menu that is jam-packed with flavoursome creations, including Mushroom Cookie, Manti Lobster, BBQ Cod, Ottoman Style Rack of Lamb, Blood Orange and Cardamon Turkish Delight, and much more, discerning foodies will be spoiled for choice throughout the talented chef’s stay.
